| Banana Upside Down Cake Ingredients |
• 1/2 cup unsalted butter
• 3/4 cup light brown sugar packed
• 4 medium sized ripe bananas
• 3/4 cup all purpose flour
• 1/4 cup Xtend Salted Carmel Whey
• 3/4 cup granulated sugar
• 2 teaspoons baking powder
• pinch salt optional and to taste
• 1 large egg
• 3/4 cup buttermilk
• 1 tablespoon vanilla extract

| Directions |
1. in :30 intervals, melt butter. Pour into cast iron skillet and sprinkle brown sugar evenly over melted butter. Let sit for 1 min. Cut 3 bananas in half lengthwise, lay in butter/brown sugar to make a pattern of your choosing!
2. in a barge bowl mix dry ingredients; flour, cocoa powder, whey, granulated sugar baking powder and salt.
3. in separate bow, mash remaining 2 bananas, combine with egg, buttermilk and vanilla. Add wet mixture to the dry mixture and stir just to combine. Do not over-mix (this will be very similar to pancake batter). Pour over banana/butter in cast iron taking care not to change their position.
4. Bake 35-40 minutes at 350. Remove from oven and allow to cool slightly before inverting onto plate.
